Description

Ingredients

Kosher salt

1 lb fresh or frozen sweet peas (preferably petite peas)

2 scallions, sliced

1 clove garlic, grated

1/4 cup chopped fresh basil leaves

1/4 cup chopped fresh mint leaves

1 lemon, zested and juiced

5 oz feta, crumbled, divided

Extra-virgin olive oil, for drizzling

Pita chips, crostini, or crudités, for serving


Instructions

  1. In a small saucepan, bring 2 quarts of water to a boil and season with a pinch of salt. Prepare a medium bowl with ice and water. Add the peas to the boiling water and cook for 2 minutes, until tender but still bright green.

  2. Using a slotted spoon, transfer the peas to the ice bath to cool. Once cooled, transfer the peas to a food processor.

  3. Add the scallions, garlic, basil, mint, lemon zest, lemon juice, and 1/2 teaspoon of salt to the food processor. Pulse until the mixture starts to become creamy, about 1-2 minutes.

  4. Add 4 ounces of feta and pulse again until the feta is broken down and well combined.

  5. Transfer the dip to a serving bowl, top with the remaining 1 ounce of feta, drizzle with olive oil, and serve with pita chips, crostini, or fresh veggies.

Notes

Cheese Options: For a creamier texture, substitute feta with goat cheese.

Herb Alternatives: Experiment with other herbs like chives, parsley, or tarragon for a different flavor profile.
