Ingredients

- Vegetable oil (for frying)

Instructions
- Prepare the Cheesecake Filling:
- In a medium bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Fold in diced strawberries and strawberry jam until evenly combined.
- Assemble the Eggrolls:
- Place an eggroll wrapper on a clean surface in a diamond shape.
- Spoon 1-2 tablespoons of filling into the center.
- Fold the bottom corner over the filling, tuck in the sides, and roll tightly. Seal the edge with water. Repeat for all wrappers.
- Fry the Eggrolls:
- Heat about 2 inches of vegetable oil in a large skillet or pot to 350°F (175°C).
- Fry the eggrolls in small batches, turning occasionally, until golden brown and crispy (about 2-3 minutes per batch).
- Remove with a slotted spoon and drain on a paper towel-lined plate.
- Serve:
- Dust with powdered sugar and serve warm with melted chocolate or extra strawberry jam for dipping.
