Ingredients

  • 2 cups (240g) sugar cookie crumbs (about 1012 cookies)
  • 4 oz (113g) cream cheese, room temperature
  • 1/4 teaspoon vanilla extract (optional)
  • 10 oz (283g) vanilla melting wafers
  • Holiday sprinkles
  • 1/8 cup reserved melting wafers for drizzle

Instructions

  1. Line a large baking sheet with parchment or wax paper.
  2. Process sugar cookies in a food processor until fine crumbs form.
  3. In a mixing bowl, combine cookie crumbs and softened cream cheese. Mix until the mixture holds together.
  4. Roll 1 tablespoon portions into balls and place on the prepared baking sheet.
  5. Freeze for 15-20 minutes until firm.
  6. Meanwhile, melt the vanilla melting wafers in the microwave, heating in 30-second intervals, stirring until smooth.
  7. Use a fork to dip each chilled truffle into the melted coating. Tap the fork to remove excess coating, scraping the bottom of the fork on the edge of the bowl.
  8. Place truffles back on the baking sheet and add sprinkles immediately.
  9. Refrigerate truffles for 5 minutes to set the coating.
  10. Drizzle the remaining melted coating over the truffles.
  11. Let the truffles cool completely before serving.
