Description

Sweet potatoes (medium-sized)

Instructions

  • Preheat your oven to 400°F (200°C).

  • Slice the sweet potatoes into 1/2-inch thick slices (a mandoline works well for even slices).

  • Place the slices on a baking sheet lined with parchment paper. Brush them lightly with olive oil and season with salt and pepper.

  • Roast the sweet potato slices for 25-30 minutes, flipping them halfway through, until they are tender on the inside and crispy on the edges.

  • While the sweet potatoes are roasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork, then add a squeeze of lemon or lime juice, and season with salt and pepper to taste.

  • Once the sweet potato slices are done, remove them from the oven and let them cool slightly.

  • Spread the mashed avocado evenly on each slice of sweet potato toast.

  • Top with optional toppings like sliced cherry tomatoes, a sprinkle of red pepper flakes, or fresh herbs like cilantro, parsley, or basil.
