Description

These Honey Bunny Butter Biscuits are tender, flaky, and lightly sweetened with honey, making them perfect for breakfast, brunch, or festive gatherings like Easter. Their adorable bunny shape makes them a delightful treat for kids and adults alike. Brushed with a warm honey-butter glaze, these biscuits are irresistible and easy to make with simple pantry staples!

Ingredients

For the Biscuits:

  • 2 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 6 tablespoons unsalted butter, ice cold
  • ¾ cup buttermilk
  • 2 tablespoons honey

For the Honey Butter Glaze:

  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons honey

Optional Topping:

  • 1 tablespoon demerara or turbinado sugar (for crunch)

Instructions

1. Prepare the Dough:

  • Preheat oven to 450°F (232°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together flour, baking powder, and salt.
  • Using a box grater, grate the ice-cold butter into the flour mixture. Toss with a fork to evenly coat.
  • Add buttermilk and honey, stirring gently until just moistened. Do not overmix.
  • Cover the dough and refrigerate for 10 minutes to firm up.

2. Shape the Biscuits:

  • On a floured surface, press the dough into a 1-inch thick rectangle.
  • Fold the dough like a letter, then flatten again. Repeat 3 times for flaky layers.
  • Roll the dough to a ½-inch thickness.
  • Dip a bunny-shaped cookie cutter in flour and cut out biscuits. Place on the baking sheet.
  • Gather scraps, re-roll, and continue cutting until all dough is used.

3. Bake the Biscuits:

  • Bake for 12-15 minutes until golden brown and puffed.

4. Add the Honey Butter Glaze:

  • While warm, brush biscuits with the honey-butter glaze.
  • Optionally, sprinkle with demerara or turbinado sugar for extra sweetness.
