Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup light brown sugar, gently packed
  • ½ cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the peanut butter, egg, and vanilla extract until smooth.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually add this to the wet mixture, blending until just combined.
  5. Scoop dough onto the baking sheet, spacing cookies 2 inches apart. Press each cookie gently with a fork in a crisscross pattern.
  6. Bake for 10-12 minutes, until the edges are set and golden. Centers should appear slightly soft.
  7. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
