Ingredients
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup light brown sugar, gently packed
- ½ cup creamy peanut butter
- 1 large egg
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
- In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in the peanut butter, egg, and vanilla extract until smooth.
- In another bowl, whisk together flour, baking soda, and salt. Gradually add this to the wet mixture, blending until just combined.
- Scoop dough onto the baking sheet, spacing cookies 2 inches apart. Press each cookie gently with a fork in a crisscross pattern.
- Bake for 10-12 minutes, until the edges are set and golden. Centers should appear slightly soft.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
