Ingredients

For the Salad:

Baby spinach or your preferred greens

1 pint cherry tomatoes, halved

2 fresh peaches, quartered

1 cup fresh strawberries, quartered

½ cup crumbled feta cheese

Fresh parsley (optional, for garnish)

¼ cup sunflower seeds (or nuts like pecans or walnuts)

For the Honey Mustard Dressing:

3 tablespoons olive oil (or avocado oil)

2 tablespoons mustard (yellow, Dijon, or grainy)

2 tablespoons honey (preferably raw, local honey)

1 garlic clove, minced

2 tablespoons fresh lemon juice (or lime juice)


Instructions

  1. In a large bowl, combine the spinach, halved cherry tomatoes, quartered peaches, quartered strawberries, crumbled feta, parsley, and sunflower seeds.
