Description

This Tortellini Caprese Salad is a quick, fresh, and satisfying twist on the classic Caprese, featuring cheese tortellini, juicy tomatoes, mozzarella, basil, and a drizzle of balsamic glaze. Ready in just 20 minutes, it’s the perfect summer pasta salad for potlucks, lunches, or light dinners.


Ingredients

1 (20 oz) package cheese tortellini

1 pint cherry or grape tomatoes, halved

1 cup fresh mozzarella pearls (or chopped mozzarella)

12 cups fresh spinach, chopped

¼ cup fresh basil, chopped

1 clove garlic, minced

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon Italian seasoning

Salt and pepper, to taste

Balsamic glaze, for drizzling (optional)


Instructions

  1. Cook the tortellini according to package instructions. Drain and rinse with cold water to stop cooking.

  2. In a large mixing bowl, combine tortellini, tomatoes, mozzarella, spinach, basil, and garlic.

  3. Drizzle with olive oil and balsamic vinegar. Add Italian seasoning, salt, and pepper.

  4. Toss until evenly coated. Taste and adjust seasoning if needed.

  5. Chill until ready to serve. Drizzle with balsamic glaze just before serving, if desired.

Notes

Add grilled chicken or shrimp to make it a full meal.

Try with pesto, lemon vinaigrette, or a light Italian dressing for a flavor twist.

For crunch, toss in toasted pine nuts or walnuts.

Best served cold, but also delicious at room temperature.

Use tricolor or spinach tortellini for visual variety.
