Ingredients
1 (20 oz) package cheese tortellini
1 pint cherry or grape tomatoes, halved
1 cup fresh mozzarella pearls (or chopped mozzarella)
1–2 cups fresh spinach, chopped
¼ cup fresh basil, chopped
1 clove garlic, minced
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon Italian seasoning
Salt and pepper, to taste
Balsamic glaze, for drizzling (optional)
Instructions

Cook the tortellini according to package instructions. Drain and rinse with cold water to stop cooking.

In a large mixing bowl, combine tortellini, tomatoes, mozzarella, spinach, basil, and garlic.

Drizzle with olive oil and balsamic vinegar. Add Italian seasoning, salt, and pepper.

Toss until evenly coated. Taste and adjust seasoning if needed.

Chill until ready to serve. Drizzle with balsamic glaze just before serving, if desired.
Notes
Add grilled chicken or shrimp to make it a full meal.
