Ingredients

For the Pastry

  • 2 sheets puff pastry, thawed

For the Custard Filling

  • ½ cup sugar
  • ⅓ cup custard powder
  • 1 cup heavy cream
  • 2 cups milk
  • 2 tsp vanilla extract

For the Icing

  • 1 ½ cups icing sugar
  • 1 tbsp softened butter
  • 1 tsp vanilla extract
  • 23 tbsp milk (as needed)

Instructions

Prepare the Puff Pastry

  1. Preheat oven to 190°C (374°F).
  2. Lay puff pastry sheets on a lined baking tray, prick with a fork, and bake for 10-15 minutes until golden. Cool completely.

Make the Custard Filling

  1. In a saucepan, whisk sugar and custard powder.
  2. Add cream, milk, and vanilla, whisking until smooth.
  3. Cook over low heat, stirring continuously, until thickened (10-15 minutes).
  4. Transfer to a bowl, cover with plastic wrap, and refrigerate for 1-2 hours.

Prepare the Icing

  1. Mix icing sugar, butter, and vanilla.
  2. Add milk gradually until smooth and spreadable.

Assemble the Slice

  1. Place one pastry sheet in a 25×25 cm square tin.
  2. Spread custard evenly, then top with the second pastry sheet.
  3. Spread icing over the top and refrigerate for 4-6 hours (overnight preferred).

Cutting and Serving

  1. Use scissors or a serrated knife for the top layer, then a sharp knife for clean slices.
  2. Serve chilled.

Notes

  • For a chocolate version, add cocoa to the custard.
  • Store in the fridge for up to 3 days.
