Description

Ingredients

1 cup warm water (around 110°F)

2 ¼ teaspoons active dry yeast (1 packet)

¼ cup granulated sugar

1 large egg

½ cup evaporated milk

1 teaspoon pure vanilla extract

3 ½ cups all-purpose flour (plus more for dusting)

2 tablespoons unsalted butter, melted

¼ teaspoon salt

Vegetable oil (for frying)

Powdered sugar (for dusting)


Instructions

  1. In a large bowl, combine the warm water, active dry yeast, and granulated sugar. Stir until the yeast dissolves, and let it sit for about 5 minutes until frothy.

  2. Add the egg, evaporated milk, and vanilla extract to the yeast mixture, stirring well.

  3. Gradually add flour, one cup at a time, mixing until a dough forms. Add melted butter and salt, and knead for about 5 minutes until smooth and elastic.

  4. Cover the dough with a clean towel and let it rise in a warm place for 1 to 1 ½ hours until doubled in size.

  5. Punch the dough down, roll it out to about ¼-inch thickness on a floured surface. Cut into squares or rectangles.

  6. Heat vegetable oil in a deep fryer or pot to 350°F. Fry the beignets for 2-3 minutes per side until golden and puffed.

  7. Remove from the oil and drain on a paper towel-lined plate. Dust with powdered sugar.

  8. Serve warm and enjoy!
