Description

Vegan Buffalo Quinoa Bites are a spicy, protein-packed, and plant-based snack or appetizer that’s perfect for parties, meal prepping, or healthy snacking. Gluten-free, dairy-free, and served with a creamy vegan ranch dip, these bites are a flavorful alternative to traditional buffalo wings.


Ingredients

For the Bites:

1 can white beans (15 oz)

1 shallot, chopped

3 garlic cloves

1/4 cup vegan buffalo sauce

1 teaspoon smoked paprika

1/2 teaspoon salt and pepper

1 cup cooked quinoa

3 tablespoons chickpea flour

For the Ranch Dressing:

1/4 cup tahini

2 tablespoons hemp hearts

1/4 cup fresh chives

1 tablespoon nutritional yeast

1 teaspoon onion powder

1 teaspoon garlic powder

12 teaspoons dried dill

1/2 teaspoon salt and pepper

Juice of 1 lemon

1/23/4 cup water


Instructions

  1. Preheat oven to 350°F and spray a baking sheet.

  2. In a food processor, pulse half the beans, shallot, and garlic until combined.

  3. Add buffalo sauce and spices; process until smooth.

  4. Pulse in remaining beans, quinoa, and chickpea flour until just combined.

  5. Shape into golf ball-sized patties and place on the baking sheet.

  6. Bake for 30 minutes, flipping halfway through.

  7. Let cool for 5–10 minutes.

  8. Blend ranch dressing ingredients until smooth.

  9. Serve bites with vegan ranch and optional carrot and celery sticks.

Notes

Chickpea flour can be swapped with almond flour.

Add fresh herbs like parsley or cilantro for extra flavor.

Adjust spice levels with a pinch of cayenne pepper.

Air fry at 375°F for about 10–12 minutes for a crispier version.

Store in the fridge for up to 4 days or freeze for up to 2 months.
