Ingredients
6 large eggs
1 cup zucchini, grated
½ cup feta cheese, crumbled
1 small onion, diced
Salt and pepper to taste
Olive oil for cooking
Instructions

Preheat oven to 350°F (175°C).

Heat olive oil in an oven-safe skillet over medium heat.

Add diced onion and sauté until translucent.

Add grated zucchini and cook for 3–4 minutes until softened.

In a bowl, whisk eggs with salt and pepper. Pour over veggies in skillet.

Sprinkle crumbled feta on top. Cook until edges start to set.

Notes
