Ingredients
2 medium zucchinis
1 cup grape tomatoes (chopped)
2 cloves garlic (minced)
¼ cup Parmesan cheese (grated)
¼ cup fresh basil leaves (chopped)
2 tbsp olive oil (plus extra for brushing)
1 tbsp balsamic vinegar
Salt and pepper (to taste)
Instructions
-
Preheat your oven to 400°F (200°C).
-
Slice the zucchini into ¼-inch rounds on an angle. Brush both sides with olive oil and arrange on a lined baking sheet.
-
Roast the zucchini slices in the oven for 4-5 minutes, flipping halfway through to ensure even cooking.
-
While the zucchini roasts, prepare the topping: In a bowl, combine the chopped tomatoes, minced garlic, basil, Parmesan, olive oil, balsamic vinegar, salt, and pepper.
-
Once the zucchini is done roasting, remove it from the oven and top each slice with the tomato mixture.
-
Optional: Garnish with additional basil or Parmesan before serving.
Notes
For a richer flavor, try adding fresh mozzarella or using a variety of tomatoes like cherry or Roma.
Swap out basil for other fresh herbs like oregano or parsley for different flavor profiles.
Use gluten-free bread or roasted eggplant slices as an alternative base if you prefer.
