These Baked Mint Meatballs (Albanian Qofte) are a flavorful and healthier alternative to traditional fried meatballs. Infused with fresh mint, parsley, and garlic, they offer a Mediterranean-inspired taste in every bite. Perfectly baked to golden brown, they are juicy, aromatic, and easy to make. Ingredients
- 1.5 lbs ground beef
- 2 eggs
- 1 tbsp extra virgin olive oil
- 1 bunch parsley (about ½ cup chopped)
- 7–8 fresh mint leaves
- 1 red onion, finely chopped
- ½ cup bread crumbs (or 1–2 slices of soaked bread)
- 5 garlic cloves, minced (or 1 tsp minced garlic)
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
Instructions
- Finely mince the garlic, and chop the onion, parsley, and mint.
- In a large bowl, mix the ground beef, eggs, olive oil, garlic, onion, bread crumbs, salt, pepper, parsley, and mint until well combined.
- Cover and refrigerate for 1 hour to enhance the flavors.
- Preheat the oven to 400°F (200°C).
- Shape the mixture into small meatballs and place them on a parchment-lined baking sheet.
- Bake for about 40 minutes or until cooked through and golden brown.
- Let cool slightly before serving.
Notes
- For extra flavor: Use lamb instead of beef for a richer taste.
- Make it spicy: Add red pepper flakes or cayenne.
- Cheese-stuffed: Insert a cube of feta or mozzarella in the center of each meatball.
- Storage: Refrigerate for up to 3 days or freeze uncooked meatballs for up to 2 months.
- Reheating: Bake at 350°F (175°C) for 10 minutes or microwave for a quick warm-up.
