Ingredients

2 chicken breasts

1 can (14.5 oz) diced tomatoes

1 cup chicken broth

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 tsp Italian seasoning

1 cup cooked pasta

Chopped parsley, for garnish


Instructions

  1. Place the chicken breasts at the bottom of the Crockpot.

  2. Add diced tomatoes, chicken broth, heavy cream, grated Parmesan, mozzarella cheese, and Italian seasoning. Stir to combine.

  3. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is fully cooked and tender.

  4. Remove chicken from the Crockpot, shred with two forks, and return it to the soup.

  5. Stir in the cooked pasta and let the soup cook on high for 15-20 minutes, until everything is well combined and heated.

  6. Serve hot, garnished with chopped parsley and extra Parmesan if desired.
