Ingredients

1 lb boneless, skinless chicken breasts

6 cups chicken broth

1 cup wild rice

2 carrots, diced

2 celery stalks, diced

1 onion, diced

1 cup heavy cream

Instructions

  • Place chicken breasts in the Crockpot.

  • Add chicken broth, wild rice, diced carrots, diced celery, and diced onion. Stir to combine.

  • Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken is cooked and rice is tender.

  • Remove chicken, shred it with two forks, and return it to the soup.

  • Stir in heavy cream and cook on high for an additional 15-20 minutes.
