Ingredients
- 6 large eggs
- 1/4 cup cream cheese, softened
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 2 tablespoons pickled jalapeños, chopped
Instructions
- Hard boil the eggs: Place the eggs in a saucepan and cover with water. Bring to a boil, then reduce heat and let simmer for 10-12 minutes. Remove from heat, cool in an ice bath or under cold running water, peel, and slice in half lengthwise.
- Prepare the filling: Scoop out the yolks and mash them with a fork until smooth.
- Make the filling: Add softened cream cheese, mayonnaise, Dijon mustard, and chopped pickled jalapeños to the yolks. Mix until smooth. Taste and adjust seasoning with more mayonnaise or jalapeños as needed.
- Fill the eggs: Spoon the filling into the egg whites or use a piping bag for a decorative touch.
- Serve: Garnish with extra chopped pickled jalapeños, paprika, or hot sauce. Serve immediately or refrigerate until ready.
Notes
- Extra heat: For more spice, add sriracha or cayenne pepper to the filling.
- Cheese variation: Add shredded cheddar cheese to the filling for a cheesy twist.
- Smokier flavor: Use roasted jalapeños instead of pickled for a smoky taste.
