Ingredients

  • 1 cup fresh spinach leaves, chopped
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons crumbled feta cheese
  • 2 tablespoons ricotta cheese
  • 2 tablespoons sun-dried tomatoes, drained and chopped

Instructions

  • Heat a skillet or griddle over medium heat.
  • In a bowl, combine the chopped spinach, mozzarella cheese, crumbled feta cheese, ricotta cheese, and chopped sun-dried tomatoes. Stir until well mixed.
  • Butter one side of each slice of bread.
  • Spread the cheese and spinach mixture on the unbuttered side of one slice of bread.
  • Top with the other slice of bread, buttered side facing out.
  • Grill the sandwich on the skillet for 3-4 minutes on each side or until golden brown and the cheese is melted.
  • Remove from the heat, slice, and serve hot.
