- ½ cup (100g) castor sugar
- 1 tablespoon honey
- 1 teaspoon rose water
- ½ cup (113g) unsalted butter, melted

- 1 cup (120g) cake flour
- 1 teaspoon baking powder

Prepare the Batter:
- In a bowl, whisk together eggs, sugar, honey, and rose water for 3-4 minutes until pale and slightly thickened.
- Sift in the cake flour and baking powder, then fold gently.
- Add melted butter and mix until smooth.

- Cover and refrigerate for at least 1 hour (or overnight for best results).

Prepare the Pan:
- Preheat the oven to 400°F (200°C).
- Grease a madeleine pan with butter and lightly dust with flour.

- Spoon or pipe the batter into the madeleine molds, filling them 80-90% full.

- Reduce the oven temperature to 350°F (180°C) and bake for 10-12 minutes, until golden brown with a signature hump.
