Description

    • 1 cup (120g) cake flour
    • 1 teaspoon baking powder

Instructions

  1. Prepare the Batter:

    • In a bowl, whisk together eggs, sugar, honey, and rose water for 3-4 minutes until pale and slightly thickened.
    • Sift in the cake flour and baking powder, then fold gently.
    • Add melted butter and mix until smooth.
  2. Chill the Batter:

    • Cover and refrigerate for at least 1 hour (or overnight for best results).
  3. Prepare the Pan:

    • Preheat the oven to 400°F (200°C).
    • Grease a madeleine pan with butter and lightly dust with flour.
  4. Fill the Molds:

    • Spoon or pipe the batter into the madeleine molds, filling them 80-90% full.
  5. Bake the Madeleines:

    • Reduce the oven temperature to 350°F (180°C) and bake for 10-12 minutes, until golden brown with a signature hump.
  6. Cool and Serve:

    • Remove from the pan and let cool on a wire rack.
