Ingredients
- 1 pre-made pie crust or homemade quiche crust
- 200g (7 oz) smoked salmon, cut into pieces
- 1 leek, white part only, finely sliced
- 2 cloves garlic, minced
- 5 large eggs
- 1½ cups (375 ml) heavy cream
- ¾ cup (75g) gruyère cheese, grated
- 2 tbsp fresh dill, chopped
- Salt and pepper to taste
Instructions
- Prepare the Crust: Fit a pie crust into a 9-inch tart tin or pie dish. If homemade, blind bake it first.
- Preheat Oven: Set oven to 350°F (175°C).
- Sauté Aromatics: Cook leeks and garlic in butter over medium heat until soft (about 2 minutes).
- Assemble the Filling: Spread leeks in the crust, add two-thirds of the salmon.
- Make the Custard: Whisk eggs, cream, dill, salt, and pepper. Pour over the filling.
- Top and Bake: Sprinkle gruyère and remaining salmon on top. Bake for 40 minutes until the center is set.
- Rest & Serve: Let the quiche cool for 10 minutes before slicing.
